Our Little Mermaid

Ok so maybe we went a little over the top with this one. Parker wanted a “little mermaid” birthday party. So I created her some front & back invitations on shiny, sparkly thick card stock. They turned out beautiful! Then for her party we and yes I mean Rick and I made her this massive mermaid cake that was the length of her. We started on Friday night icing over 100 cookies (scales) and also made 3 cakes. Of course they were all from scratch. Two were a moist devils food cake, 1 was a sour cream marble cake along with the cupcakes. All had homemade white chocolate cream cheese icing. This was totally a team effort. Rick is fantastic at the cutting, the specific pieces needed. He is a surgeon after all. I’m sure he is a little fearful about what the next theme will be. We have made really fantastic cakes for each of their birthdays. I was telling him that they will grow up and remember their mom and dad working for hours to build and make their special cakes. He’s a great sport and never complained once! I can’t say that many husbands would be as willing to do this on a Saturday.
